Italian Grilled Zucchini and Red Onion
- 1 tablespoon olive oil
- 4 slices red onions
- 2 lbs small zucchini
- 12 teaspoon salt
- 12 teaspoon fresh ground pepper
- 2 tablespoons red wine vinegar
- 13 cup fresh parmigiano-reggiano cheese
- 2 tablespoons thinly sliced of fresh mint
- Prepare grill to medium-high heat.
- Combine olive oil, red onion and zucchini (cut lengthwise) in a large bowl.
- Sprinkle zucchini mixture with half of the salt and pepper mixture, toss gently to coat.
- Arrange vegetables in a single layer on a grill rack; grill 4 minutes on each side or until zucchini is tender and vegetables are well marked.
- Remove zucchini from grill; reduce heat to medium-low.
- Grill onions an additional 5 minutes or until tender.
- Combine zucchini, onion, and vinegar in a large bowl, tossing to coat.
- Sprinkle with remaining salt/pepper mixture, cheese, and mint.
