Baked Cheese Tomatoes Recipe
- 4 lrg hard tomatoes
- 2 c. grated mild cheddar cheese
- 1 c. toasted bread cubes, (2 slices)
- 2 tsp basil
- 1/2 tsp salt
- 1 Tbsp. parsley flakes
- 1/2 c. minced cashews
- 2 Tbsp. butter, melted
- 1/2 c. finely minced onion
- 1/2 c. tomato pulp
- Preheat oven to 350F.
- Core tomatoes and scoop out pulp, leaving sturdy shell.
- Sprinkle lightly with salt.
- Combine remaining ingredients.
- Fill tomato shells with cheese mix.
- Bake, covered, for 30 min, or possibly till cheese melts.
- Serves 6.
- For variation, tomatoes can be cooked on a grill for 15-30 min depending on fire.
