Spicy Bruschetta Pork Chops for Two

  1. Heat oven to 425 degrees F.
  2. Pour 1/4 cup dressing over chops in shallow dish; turn to evenly coat both sides of each chop.
  3. Refrigerate 15 min.
  4. Drain chops; discard dressing.
  5. Place coating mix in shallow bowl.
  6. Dip chops in coating mix, turning to evenly coat both sides of each chop.
  7. Place on baking sheet sprayed with cooking spray.
  8. Discard any remaining coating mixture.
  9. Bake 20 min.
  10. or until chops are done (145 degrees F).
  11. Meanwhile, combine tomatoes, remaining dressing, parsley and crushed red pepper.
  12. Top chops with tomato mixture and cheese.
  13. Bake 5 min.
  14. or until cheese is melted.
