Sweet & Sour Chicken

  1. In a small bowl, combine the sweet & sour sauce, soy sauce, cornstarch and water; set aside.
  2. Heat 1 tablespoon oil in a large skillet or wok over high heat.
  3. Cook and stir chicken until no longer pink.
  4. Remove from skillet; set aside.
  5. Pour remaining oil into hot skillet.
  6. Cook and stir onion and bell pepper until crisp tender, about 2 minutes.
  7. Stir in cooked chicken, bamboo shoots and pineapple chunks.
  8. Stir sauce mixture and add to skillet.
  9. Cook until heated through and sauce thickens, stirring occasionally, about 1 minute.
  10. Serve immediately with hot cooked rice.
