Bacon and Broccolini Omelette
- 80g bacon, finely chopped
- 60g block PHILADELPHIA Cream Cheese, softened
- 1/4 cup grated Swiss cheese
- 5 eggs
- 2 cups broccolini florets, blanched
- black pepper, to taste
- Saute the bacon in a greased 20cm frying pan.
- Whisk together the Philly*, cheese and eggs until mixed.
- Stir in broccolini and pepper.
- Pour the Philly* mixture over the bacon in the pan.
- Cook over a gentle heat for 5-8 minutes or until cooked through.
- (If necessary, top the frypan with a lid to aid cooking or place under a hot grill).
- Cut in half and serve.
