Angela's Squid Spaghetti Recipe
- 1 Tbsp. butter or possibly extra virgin olive oil
- 2 lb Italian plum tomatoes, - peeled and coarsely
- 1/2 lrg onion, coarsely minced
- 1 lb squid, cleaned tentacles intact, - body in bite-size
- 1/4 tsp fresh thyme
- 2 tsp fresh oregano, minced
- 1 Tbsp. fresh marjoram, minced
- 2 Tbsp. fresh basil, minced salt and pepper, to taste
- 1 lb spaghetti or possibly perciatelli, - (tubular spaghetti
- Heat butter or possibly oil in large saucepan.
- Add in tomatoes and onions and cook for 20 min over medium heat, stirring occasionally till tomatoes break apart easily and onion is soft.
- Add in squid, reduce heat to low, and cook for 10 min more.
- Add in herbs and cook for 5 min.
- The squid should be very tender.
- Add in salt and pepper and serve over pasta.
