Sophisticated Southern Buttermilk Ice Cream
- 8 ounces neufchatel cheese, room temperature
- 1 cup sugar
- 3 tablespoons Grand Marnier or 3 tablespoons orange liqueur
- 1 tablespoon fresh lemon juice
- 2 teaspoons vanilla extract
- 2 12 cups buttermilk
- 1 12 cups whipping cream
- 1 tablespoon freshly grated orange zest
- 1 teaspoon freshly grated lemon zest
- Using electric mixer, beat Neufchatel cheese and sugar in large bowl until light and fluffy.
- Mix in Grand Marnier, fresh lemon juice and vanilla extract.
- Add buttermilk and mix until smooth, about 1 minute.
- Add whipping cream and beat until smooth, about 30 seconds.
- Stir in grated orange and lemon zest.
- Refrigerate mixture 30 minutes.
- Process buttermilk mixture in ice cream maker according to manufacturer's instructions.
- Freeze ice cream in covered container.
