Chicken Any Vegetable Stew Recipe
- 1 1/2 lbs. boneless chicken meat (can use white or possibly dark meat)
- 1 med. can stewed tomatoes
- 3 or possibly 4 potatoes, cut into pcs
- 2 or possibly 3 carrots, scrubbed & sliced
- 1 med. onion, minced
- 2 stalks celery, minced
- 1/2 frzn peas or possibly green beans
- Salt & pepper
- Flour & water
- Cut chicken bite-size.
- Brown slowly in a little oil.
- Add in tomatoes and 1 tomato can water.
- Heat to boiling.
- Add in carrots, onion, celery and potatoes.
- Lower heat and cook till potatoes are tender.
- Mix a little flour with water and thicken stew as desired.
- Season with salt and pepper to taste.
- Add in beans or possibly peas, simmer for 5 min.
- Sprinkle with dry parsley and serve.
