Stuffing-Sweet Potato Latkes
- 1 lb. sweet potatoes (about 2), peeled, shredded
- 1-1/4 cups water, divided
- 3 eggs
- 1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
- 2 green onions, sliced
- 1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
- Place potatoes in microwaveable bowl.
- Add 1/4 cup water; cover with waxed paper.
- Microwave on HIGH 1-1/2 min.
- ; stir.
- Microwave an additional 1-1/2 to 2 min.
- or until potatoes are tender; cool slightly.
- Drain potatoes.
- Whisk eggs and remaining water in medium bowl until blended.
- Add stuffing mix, onions and potatoes; mix well.
- Shape into 24 patties, using about 2 Tbsp.
- potato mixture for each.
- Place on baking sheet.
- Refrigerate 30 min.
- Cook patties, in batches, in large skillet sprayed with cooking spray on medium heat 6 min.
- or until golden brown on both sides, turning carefully after 3 min.
- Serve with sour cream.
