Stuffing-Sweet Potato Latkes

  1. Place potatoes in microwaveable bowl.
  2. Add 1/4 cup water; cover with waxed paper.
  3. Microwave on HIGH 1-1/2 min.
  4. ; stir.
  5. Microwave an additional 1-1/2 to 2 min.
  6. or until potatoes are tender; cool slightly.
  7. Drain potatoes.
  8. Whisk eggs and remaining water in medium bowl until blended.
  9. Add stuffing mix, onions and potatoes; mix well.
  10. Shape into 24 patties, using about 2 Tbsp.
  11. potato mixture for each.
  12. Place on baking sheet.
  13. Refrigerate 30 min.
  14. Cook patties, in batches, in large skillet sprayed with cooking spray on medium heat 6 min.
  15. or until golden brown on both sides, turning carefully after 3 min.
  16. Serve with sour cream.
