Bollywood Basmati

  1. Warm olive oil in a medium saucepan.
  2. Add rice and onion.
  3. Stir until rice is well coated and translucent around edges, about 2 minutes.
  4. Add water and salt.
  5. Stir, cover, reduce heat to low and cook 20 minutes.
  6. Remove from heat and let rest, covered, for 5 minutes.
  7. Fluff rice.
  8. Then gently mix in remaining ingredients.
