Chicken Bake With Corn, Eggplant, Broccolini and Fava Beans
- 2 thawed chicken breasts
- 12 lb Broccolini
- 1 (8 ounce) can fava beans, not drained
- 2 small eggplants, cubed and lightly salted
- 2 cups frozen corn
- 2 tablespoons olive oil
- 1 teaspoon salt (to taste)
- 12 teaspoon freshly cracked pepper
- 1 teaspoon cajun seasoning
- Rub eggplant cubes with salt.
- Place all ingredients in a 8" x 12" baking pan or as appropriate for quantity cooking.
- I prefer a large glass dish.
- Bake in oven at 350F for 1 hour or until chicken is done.
- Optionally, cube chicken and serve with brown rice.
