Almond Cookie Strips
- 1 cup butter, softened (no substitutions)
- 1 cup white sugar
- 1 egg yolk (save the white)
- 1 teaspoon vanilla
- 14 teaspoon almond extract
- 18 teaspoon salt
- 2 cups flour
- 1 egg white
- 2 tablespoons sugar
- 14 teaspoon cinnamon
- 12 cup finely chopped almonds
- Preheat oven to 350 F.
- Beat together, the butter and 1 cup sugar until light and fluffy.
- / Stir in egg yolk, vanilla, almond extract and salt.
- /Stir in flour; mix well.
- / Pat into a lightly greased 15" x 10" baking pan.
- / In a bowl, beat the egg white until stiff, then beat in 2 tbsp sugar, and 1/4 tsp cinnamon.
- / Fold in the almonds into the egg white mixture.
- / Spread over the base.
- / Bake 25-30 minutes.
- / Remove from oven; let cool 10 minutes.
- / Cut into bars while still warm.
