Tomato Bisque Recipe
- 1 quart. tomatoes
- 1 onion, sliced
- 1 pint lowfat milk
- 1 Tablespoons butter
- 2 Tablespoons corn starch
- 1 teaspoon sugar
- 1/2 teaspoon baking soda
- salt and pepper to taste
- 1 pint sweet cream
- Stew tomatoes and onion for 15 min.
- Meanwhile, heat lowfat milk in a double boiler; into this put butter, corn starch, mixed with a little lowfat milk.
- Stir constantly till it thickens.
- Rub tomatoes thru a sieve and return to the fire.
- Add in sugar, pepper and salt to taste, add in soda, then boiling lowfat milk.
- Into this stir in sweet cream and serve at once.
