Home Style Split Pea Soup Recipe

  1. In 6 qt Dutch oven combine ham shank, carrots, celery, split peas, water, tarragon, salt, nutmeg and white pepper.
  2. Bring to boil.
  3. Cover, reduce heat and simmer for 2 1/2 - 3 hrs till ham and peas are tender.
  4. Stir in parsley.
  5. Adjust seasonings if necessary.
