Cherry/Chocolate Mascarpone Parfait
- 1 can (398) pitted Bing cherries, drained,juice reserved
- 1 tbsp. (15) all purpose flour
- 1/4 cup (50) orange liqueur
- 1 cup (250) Tre Stelle Mascarpone
- 1/2 cup (125) brown sugar
- 1/2 cup (125) confectioners sugar
- 1/2 cup (125) cocoa powder
- 2 tsp. (10) vanilla extract
- 2 cups (500) whipping cream, whipped
- 1 pkg. (375) amaretti cookies, crumbled to make 1 1/2 cups
- In a small saucepan mix together reserved cherry juice, all purpose flour and orange liqueur; cook on medium/low heat until mixture begins to thicken approximately 5 - 7 minutes.
- Remove from heat; allow to cool; add cherries and refrigerate.
- In a medium bowl, combine Mascarpone, brown sugar and confectioners sugar; beat with an electric mixture on medium speed until smooth and creamy.
- Carefully add cocoa powder and vanilla; continue beating until combined.
- Gently fold in whipped cream.
- Spoon mixture into parfait cups alternating layers with Bing cherries and amaretti cookies.
- Refrigerate until ready to serve.
- Makes approximately 4 - 6 servings
