Cherry/Chocolate Mascarpone Parfait

  1. In a small saucepan mix together reserved cherry juice, all purpose flour and orange liqueur; cook on medium/low heat until mixture begins to thicken approximately 5 - 7 minutes.
  2. Remove from heat; allow to cool; add cherries and refrigerate.
  3. In a medium bowl, combine Mascarpone, brown sugar and confectioners sugar; beat with an electric mixture on medium speed until smooth and creamy.
  4. Carefully add cocoa powder and vanilla; continue beating until combined.
  5. Gently fold in whipped cream.
  6. Spoon mixture into parfait cups alternating layers with Bing cherries and amaretti cookies.
  7. Refrigerate until ready to serve.
  8. Makes approximately 4 - 6 servings
