Mandarin Pork Roast
- 1 (4 lb.) pork roast
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. garlic powder
- 2 Tbsp. Dijon mustard
- 1 (11 oz.) can mandarin oranges
- 1/4 c. lite brown sugar
- 1/4 c. vinegar
- 1 chicken flavored bouillon cube
- 1 Tbsp. soy sauce
- 2 Tbsp. cornstarch
- 1/2 c. water
- 1 onion, chopped
- 1/3 c. green pepper, chopped
- Trim excess fat from roast.
- Sprinkle roast with salt, pepper and garlic powder.
- Spread mustard over roast and place in large Dutch oven.
- Cover and bake at 325u0b0 until meat thermometer registers 170u0b0.
- Drain mandarin oranges, reserving liquid. Combine liquid and next 6 ingredients in saucepan.
- Cook over medium heat, stirring constantly, until smooth and thickened. Remove from heat and stir in onion, green pepper and oranges. Spoon sauce over roast.
- Bake, uncovered, at 400u0b0 for 30 minutes, basting occasionally.
