Vegetable Oven Omelet Recipe

  1. Heat oven to 350 degrees.
  2. Grease 8 x 8 x 2 inch baking dish.
  3. Beat Large eggs, lowfat milk, baking mix and salt with hand beater till foamy.
  4. Remove seeds from chilies, rinse chilies with water.
  5. Place in dish.
  6. Sprinkle tomatoes and onion proportionately over chilies.
  7. Pour egg mix over vegetables.
  8. Sprinkle with cheese.
  9. Bake uncovered till egg mix is set and cheese melted, 40-45 min.
