Vegetable Oven Omelet Recipe
- 3 Large eggs
- 1 c. lowfat milk
- 1/2 c. Bisquick baking mix
- 1/2 teaspoon salt
- 2 (4 ounce. each) cans whole green chilies
- 2 c. minced tomatoes (2-3 med.)
- 1/2 c. minced onion
- 2 c. shredded Cheddar cheese
- Heat oven to 350 degrees.
- Grease 8 x 8 x 2 inch baking dish.
- Beat Large eggs, lowfat milk, baking mix and salt with hand beater till foamy.
- Remove seeds from chilies, rinse chilies with water.
- Place in dish.
- Sprinkle tomatoes and onion proportionately over chilies.
- Pour egg mix over vegetables.
- Sprinkle with cheese.
- Bake uncovered till egg mix is set and cheese melted, 40-45 min.
