Warm Chicken, Pumpkin and Penne Salad
- 450g butternut pumpkin, peeled, cut into cubes
- olive oil spray
- 2 cups penne pasta, cooked and drained
- 1/2 BBQ chicken, cut into strips
- 2/3 cup roasted capsicum, cut into strips
- 4 spring onions, diagonally sliced
- 1/3 cup KRAFT Classic Mayonnaise
- 3/4 cup walnuts, roughly chopped
- 1/3 cup milk
- 2 tablespoons sour cream
- Spray the pumpkin pieces with olive oil and bake in a hot oven 200C for 25-30 minutes or until tender.
- Toss through the warm pasta with the chicken, capsicum and spring onions.
- Combine mayonnaise, sour cream and milk, stir through 1/2 cup of the walnuts then toss through the salad ingredients.
- Sprinkle with the remaining walnuts and serve immediately.
