Warm Chicken, Pumpkin and Penne Salad

  1. Spray the pumpkin pieces with olive oil and bake in a hot oven 200C for 25-30 minutes or until tender.
  2. Toss through the warm pasta with the chicken, capsicum and spring onions.
  3. Combine mayonnaise, sour cream and milk, stir through 1/2 cup of the walnuts then toss through the salad ingredients.
  4. Sprinkle with the remaining walnuts and serve immediately.
