Meatloaf Stuffed Peppers
- 1 lb Lean Ground Beef
- 4 large Bell Peppers
- 1/2 cup Italian Breadcrumbs
- 1/4 cup Milk (about)
- 1 to 2 Eggs
- 1/2 diced sweet onion.cooked.
- 3 tbsp Brown Sugar
- 1/2 cup Shredded White Cheddar Cheese
- 2 Each: salt.pepper.onion powder.garlic powder.cayenne pepper
- 4 piece Crumbled Cooked Bacon
- 1/4 cup Cooked White Rice (or more if you prefer)
- 1 cup Spicy Tomato Basil Sauce or any Spaghetti Sauce
- Preheat Oven to 375F
- Cut just the tops off of your bell peppers.
- Hollow out peppers and get rid of any seeds.
- Mix all ingredients together in a large bowl EXCEPT for Spicy Tomato Basil Sauce.
- Reserve some of your cheese...
- Pour Spicy Tomato Basil Sauce in the bottom of a deep glass baking dish.
- Reserve a few tablespoons of the sauce.
- Pack your peppers with meatloaf mixture.
- Top with a few tablespoons of sauce then sprinkle reserved Cheese on top.
- Make sure your peppers are sturdy in your baking dish.
- COVER with foil and bake at 375F for 1 hour or until inner temperature reaches 170-175 with a meat thermometer.
- Drizzle extra sauce from the bottom of your dish if you desire.Enjoy!
