Pomegranate and Mixed Green Salad
- 1/4 cup white balsamic vinegar
- 2 tablespoons light olive oil
- 1 tablespoon grenadine
- pinch salt
- 300 g baby green beans, cooked until just tender
- 100 g baby rocket leaves
- 1 red onion, finely sliced King Sooper's 1 lb For $0.99 thru 02/09
- 1 continental cucumber, cut into ribbons with a peeler
- seeds and juice of 1 pomegranate
- 1/4 cup mintleaves
- 125 g PHILADELPHIA Cream Cheese
- COMBINE the vinegar, oil, Grenadine and salt in a jar.
- Shake until well combined.
- ARRANGE the beans, rocket, onion, cucumber, pomegranate and mint leaves in a serving bowl.
- Crumble over the PHILLY and drizzle with dressing.
- Serve immediately.
