Sweet & Spicy Bacon Wrapped Water Chestnuts
- 1 pound Sliced Bacon, Uncooked
- 2 cans (8 Oz. Size) Whole Water Chestnuts (Not The Sliced Ones)
- 1 cup Dark Brown Sugar, Divided
- 1/2 cups Ketchup
- 1/4 cups Sriracha Hot Chili Sauce
- 6 6" Wooden Skewers
- Preheat the oven to 300 F
- Start by cutting the bacon strips in half.
- Wrap 1/2 a strip of bacon around a whole water chestnut.
- Slide it onto a skewer to secure the bacon around the water chestnut.
- Repeat with a second water chestnut on the same skewer.
- Keep going until you run out of bacon or water chestnuts, securing two wrapped water chestnuts to each skewer.
- Place skewers in a shallow 9x13 baking dish and bake at 300 F for 1 to 1 1/2 hours, or until bacon is crispy.
- Remove skewers from baking dish and drain bacon fat.
- Place half the skewers back in the same pan, and half the skewers in another baking dish (I used an 8x8).
- In a small bowl, mix 1/2 cup dark brown sugar and 1/2 cup ketchup.
- Spoon this over one pan of skewers, turning to coat on all sides.
- This will be your sweet batch.
- In another small bowl, mix 1/2 cup dark brown sugar and 1/4 cup Sriracha.
- Spoon this over the second pan of skewers, turning to coat on all sides.
- This will be your spicy batch.
- Place both pans back in the oven for 1 additional hour.
- Serve warm.
