AMIEs Mango Cake

  1. Heat the oven to 175AsC (350AsF).
  2. Prepare a paper-lined 13"x9" rectangular pan.
  3. Beat egg yolks with water and vanilla until creamy.
  4. Gradually add sugar, stirring well until thick and yellow colored.
  5. Beat egg whites until foamy and add sugar, beating until stiff but not dry.
  6. Fold egg yolks, alternately, with flour into egg whites.
  7. Pour into the prepared pan and bake for 20-25 minutes, until done.
  8. Leave it to cool.
  9. ICING: Dissolve sugar into the milk.
  10. Cream butter until fluffy.
  11. Beat in milk mixture, until smooth.
  12. Blend in whipped cream.
  13. Set aside.
  14. Split cake.
  15. Spread icing on cut layer and arrange sliced mangoes, leaving several pieces for topping.
  16. Put the other half of the cake on top and ice all around.
  17. Garnish with remaining sliced mangoes.
  18. Chill and serve.
  19. Share and enjoy!
