AMIEs Mango Cake
- 1 cup sifted sugar
- 1 cup fresh milk
- 1 1/2 cup butter
- 1 cup chilled whipped cream
- 4 ripe firm mangoes, peeled and sliced into 1" x 21/2" pieces
- 10 egg yolks
- 1/4 cup water
- 1 1/2 cup butter
- 2 cup sifted sugar
- 2 cup sifted cake flour
- 10 egg whites
- Heat the oven to 175AsC (350AsF).
- Prepare a paper-lined 13"x9" rectangular pan.
- Beat egg yolks with water and vanilla until creamy.
- Gradually add sugar, stirring well until thick and yellow colored.
- Beat egg whites until foamy and add sugar, beating until stiff but not dry.
- Fold egg yolks, alternately, with flour into egg whites.
- Pour into the prepared pan and bake for 20-25 minutes, until done.
- Leave it to cool.
- ICING: Dissolve sugar into the milk.
- Cream butter until fluffy.
- Beat in milk mixture, until smooth.
- Blend in whipped cream.
- Set aside.
- Split cake.
- Spread icing on cut layer and arrange sliced mangoes, leaving several pieces for topping.
- Put the other half of the cake on top and ice all around.
- Garnish with remaining sliced mangoes.
- Chill and serve.
