Easy Pork Milanesa

  1. Mix cracker crumbs, parsley and garlic in shallow dish or pie plate.
  2. Dip pork in eggs, then in crumb mixture, turning to evenly coat both sides of each steak; set aside.
  3. Heat 2 tsp.
  4. of the oil in medium nonstick skillet.
  5. Add peppers and onions; cook and stir 4 min.
  6. or until crisp-tender.
  7. Remove from skillet; cover to keep warm.
  8. Heat 2 Tbsp.
  9. of the remaining oil in same skillet.
  10. Cook pork, in batches, 4 min.
  11. on each side or until cooked through (160F), adding remaining oil as needed.
  12. Spoon 1/2 cup of the pepper mixture over each steak just before serving.
