Easy Pork Milanesa
- 25 saltine crackers, finely crushed
- 2 Tbsp. chopped fresh parsley
- 1 clove garlic, minced
- 2 eggs, lightly beaten
- 1/4 cup oil, divided
- 4 boneless pork blade steaks (1 lb.), pounded to 1/4-inch thickness
- 1-1/2 cups mixed red, yellow and green pepper strips Target 1 pkg For $2.99 thru 02/06
- 1/2 cup onion slices
- Mix cracker crumbs, parsley and garlic in shallow dish or pie plate.
- Dip pork in eggs, then in crumb mixture, turning to evenly coat both sides of each steak; set aside.
- Heat 2 tsp.
- of the oil in medium nonstick skillet.
- Add peppers and onions; cook and stir 4 min.
- or until crisp-tender.
- Remove from skillet; cover to keep warm.
- Heat 2 Tbsp.
- of the remaining oil in same skillet.
- Cook pork, in batches, 4 min.
- on each side or until cooked through (160F), adding remaining oil as needed.
- Spoon 1/2 cup of the pepper mixture over each steak just before serving.
