Caramelised Onion Soup

  1. Slice the onions thinly into rings.
  2. Heat the butter in a large pan over low heat.
  3. Add sliced onions and cook until soft, translucent and lightly browned, stirring often.
  4. Add the sugar and continue stirring until the onions are deep brown in colour.
  5. This may take around 20 minutes.
  6. Add flour and cook for 3 minutes.
  7. Add water and Bonox* and simmer for 30 minutes.
  8. Top each slice of the baguette with a tablespoon of parmesan cheese.
  9. Toast baguette under a hot grill until golden brown.
  10. Serve on top of the soup.
