Seafood Pasta(Serves 4)
- 4 oz. tomato sauce
- 3 oz. heavy cream
- 2 Tbsp. olive oil
- 1/2 c. chopped red pepper
- 1/2 c. chopped onion
- 2 tsp. minced garlic
- 1/2 c. white wine
- 1 lb. raw shrimp
- 4 c. steamed vegetables: broccoli, zucchini, carrots, etc.
- 1 lb. pasta
- 1 oz. grated Parmesan cheese
- chopped parsley
- salt and pepper
- Heat oil in large frypan.
- Saute onion and pepper.
- Add garlic, white wine and cleaned and shelled raw shrimp.
- Simmer until shrimp are almost cooked.
- Add tomato sauce, heavy cream and steamed vegetables.
- Bring back to a simmer.
- Add salt and pepper to taste.
- Place hot cooked pasta in a large bowl.
- Top with shrimp mixture and mix thoroughly.
- Top with grated cheese and chopped parsley.
