Very Berry Muffins

  1. preheat oven to gas mark 4 180 C /355F.
  2. Mix together flour, baking soda, baking powder and salt.
  3. Mash, chop the berries coarsely and add to the dry ingredients.
  4. Whisk the egg, stir in the sugar, oil and yoghurt.
  5. Fold in the dry ingredients and stir briefly.
  6. Spoon mixture into the muffin tins, bake in centre of the oven for 20-25 minutes.
  7. leave the muffins for 5-10 mins in the tin, take out of the tin and leave until cooled serve with custard.
