Very Berry Muffins
- 130 g flour
- 1 14 teaspoons baking powder
- 14 teaspoon baking soda
- 1 pinch salt
- 100 g frozen mixed berries (thawed)
- 1 egg
- 90 g sugar
- 50 ml oil
- 125 ml yoghurt (i used strawberry)
- preheat oven to gas mark 4 180 C /355F.
- Mix together flour, baking soda, baking powder and salt.
- Mash, chop the berries coarsely and add to the dry ingredients.
- Whisk the egg, stir in the sugar, oil and yoghurt.
- Fold in the dry ingredients and stir briefly.
- Spoon mixture into the muffin tins, bake in centre of the oven for 20-25 minutes.
- leave the muffins for 5-10 mins in the tin, take out of the tin and leave until cooled serve with custard.
