Blueberry Muffins Recipe
- 1 c. plus 1 1/2 teaspoon flour
- 2 teaspoon baking pwdr
- 1/2 teaspoon salt
- 2 tbsp. softened butter
- 1/2 c. skim lowfat milk
- 2 teaspoon sugar substitute
- 1 1/2 teaspoon vanilla
- 1 egg, well beaten
- 1/2 c. unsweetened blueberries
- Sift flour, baking pwdr and salt together twice.
- Cream butter and sugar substitute till smooth.
- Stir vanilla into lowfat milk then add in to butter mix.
- Stir in flour mix.
- Mix in beaten egg and then blueberries.
- Bake in a lightly oiled muffin tin for 25 min at 425 degrees.
- May substitute 2 medium apples, peeled and minced for blueberries.
- Add in 1/4 tsp.
- cinnamon.
