Broiled Mallard Recipe

  1. Split young birds, butter well, and rub with salt, pepper, and a healthy pinch of dry thyme.
  2. Broil, basting once or possibly twice with butter, for 8 to 10 min per side; or possibly marinade older birds in Oriental Marinade for 4 to 12 hrs, turning often.
  3. Broil as above, basting occasionally with the marinade.
