Squash Patties

  2. Combine all ingredients in a large bowl and mix well (everything except the cooking spray, of course).

  4. Heat a skillet to medium-high and spray with oil spray.
  5. 3.
  6. Form into patties using about 2 tablespoons of mixture per patty.
  7. Add patties into the skillet making sure you dont crowd the pan.
  8. 4.
  9. Cook for 5 minutes and turn over to cook for 3-4 minutes more.
  10. Remove from skillet and finish cooking the rest of the patties.
  11. Makes about 18, serving size is 3.
