Squash Patties
- 2 cups (slightly Packed) Grated Acorn Squash
- 1 cup Low Fat Cottage Cheese, Small Curd
- 2 whole Eggs
- 1 whole Small Onion, Chopped Finely
- 1/2 cups Whole Wheat Flour
- 1/2 teaspoons Salt
- 1/2 teaspoons Garlic Salt
- Non-stick Cooking Spray
- 1.
- Combine all ingredients in a large bowl and mix well (everything except the cooking spray, of course).
- 2.
- Heat a skillet to medium-high and spray with oil spray.
- 3.
- Form into patties using about 2 tablespoons of mixture per patty.
- Add patties into the skillet making sure you dont crowd the pan.
- 4.
- Cook for 5 minutes and turn over to cook for 3-4 minutes more.
- Remove from skillet and finish cooking the rest of the patties.
- Makes about 18, serving size is 3.
