ROCKY ROAD BROWNIES
- 180 grams butter chopped
- 500 grams dark chocolate ( I used dark for brownie and milk for topping)
- 1 cup brown sugar
- 3/4 cup caster sugar
- 4 eggs
- 1/3 cup desiccated coconut
- 1 1/4 cup plain flour
- 1/4 cup cocoa powder
- 2 x 150gram pkts marshmallows halved
- 180 gram pkt raspberry lollies halved
- Preheat oven to 170C and grease a 20cmx30cm baking pan and line with baking paper.
- Stir butter and 250 grams of chocolate in a saucepan over low heat until melted, remove from heat.
- Stir in the 2 sugars, then whisk in the eggs one at a time,until combined.
- Stir in the coconut,then stir in the sifted cocoa powder and plain flour until combined.
- Pour into pan and bake for 30-35 minutes or until cooked.
- Cool in pan on a wire rack
- Melt remaining chocolate in a large saucepan over low heat until melted, remove and quickly stir in marshmallows and lollies then spoon over top of brownie pressing down with spatula.
- Put in fridge to set, then cut into squares and enjoy
