Tomato and Gorgonzola Bake
- 3 whole Eggs
- 1 cup Milk
- 1/2 teaspoons Ground Mustard
- 1 teaspoon Lemon Zest
- 1 teaspoon Salt
- 2 pinches Pepper
- 3 cups Croutons, Store-Bought Or Homemade
- 1 whole Large Ripe Tomato, Thinly Sliced
- 4 ounces, weight Crumbled Gorgonzola Or Other Blue Cheese
- Preheat oven to 350 degrees.
- Mix together eggs, milk, mustard, zest, and salt and pepper in a bowl.
- In a lightly greased pie plate, cover the bottom with croutons.
- Top with tomato slices, then top with cheese.
- Pour the egg mixture over and bake for 30-40 minutes or until eggs are fluffy and set.
