Tomato and Gorgonzola Bake

  1. Preheat oven to 350 degrees.
  2. Mix together eggs, milk, mustard, zest, and salt and pepper in a bowl.
  3. In a lightly greased pie plate, cover the bottom with croutons.
  4. Top with tomato slices, then top with cheese.
  5. Pour the egg mixture over and bake for 30-40 minutes or until eggs are fluffy and set.
