Lemon Chicken with Capsicum

  1. Heat half the oil and cook the chicken in a non stick frypan for 3-5 minutes or until browned, add the onion, capsicum, garlic and ginger saute another 3 minutes.
  2. Pour over the combined water, lemon juice, Vegemite*, honey and blended cornflour.
  3. Bring to the boil and stir until thickened.
  4. Simmer for a further 12-15 minutes until cooked through.
  5. Toss through the coriander and serve with rice.
