Braised Fish Steaks And Vegetables Recipe

  2. Soak dry mushrooms.

  4. Cut fish crosswise into 2 to 3 inch steaks.
  5. Wipe dry; then dredge lightly in cornstarch.

  7. Slice bamboo shoots and soaked mushrooms.
  8. Mince garlic, ginger root and scallion.

  10. Combine stock, soy sauce, sherry, brown sugar and salt.

  12. Heat oil till nearly smoking.
  13. Brown fish steaks quickly on both sides.
  14. Remove from pan.
  15. 6.
  16. Heat remaining oil.
  17. Add in chopped garlic, ginger and scallion and stir-fry a few times.
  18. Add in mushrooms and bamboo shoots and stir-fry 1 minute more.
  19. 7.
  20. Add in stock-soy mix and bring to a boil.
  21. Return fish and simmer, covered, till done (about 15 min).
