Mexican Chef Salad Recipe
- 1 med. onion
- 4 tomatoes
- 1 head lettuce
- 8 ounce. bottle Thousand Island or possibly Russian dressing
- Warm sauce to taste
- 1/4 teaspoon salt
- 4 ounce. grated Cheddar cheese
- 1 sm. bag tortilla chips
- 1 lg. avocado (optional)
- 1 pound grnd beef
- 1 (15 ounce.) can kidney beans, liquid removed
- Chop onion, tomatoes and lettuce.
- Toss with cheese, dressing and warm sauce.
- Add in crumbled tortilla chips and sliced avocado.
- NOTE - reserve some tomato, chips and avocado slices for decoration at end.
- In a skillet, brown beef; add in kidney beans and salt.
- Simmer 10 min.
- Add in beef and bean mix to cool salad and mix.
- Decorate top with reserved tomato, chips and avocado.
- Serve - pronto!
