Banana Breakfast Cake
- 5 medium bananas, extra ripe
- 1 cup whole wheat flour
- 4 tablespoons Equal sugar substitute
- 12 teaspoon baking powder
- 1 pinch salt
- 1 tablespoon flax seed
- 12 cup oats
- 13 cup canola oil
- 1 egg
- 1 cup water
- In a bowl, mix the dry ingredients together.
- Separately, beat the egg and the oil.
- Mix together, adding the water.
- Continue beating.
- Add the sliced bananas to the bottom of a small round non-stick pan.
- Cover with batter.
- Bake for about 40 minutes in med-low.
- Enjoy warm.
