House Panzanella Salad
- 2 cloves garlic, divided
- 1/2 cup Kraft Extra Virgin Olive Oil Tuscan Italian Dressing, divided
- 4 cups Italian bread cubes (1 inch)
- 2 tomatoes, chopped Safeway 1 lb For $1.29 thru 02/09
- 1 cucumber, chopped
- 10 fresh basil leaves, torn
- 2 Tbsp. fresh lemon juice Safeway 4 ct For $5.00 thru 02/09
- Heat oven to 400 degrees F.
- Mince 1 garlic clove; combine with 2 Tbsp.
- dressing in medium bowl.
- Add bread cubes; toss to coat.
- Place in single layer on baking sheet.
- Bake 12 to 15 min.
- or until golden brown on both sides, turning every 4 min.
- Cool.
- Cut remaining garlic clove in half; rub cut sides of garlic inside surface of salad bowl.
- Add croutons, remaining dressing, tomatoes, cucumbers, basil and lemon juice to bowl; mix lightly.
