Crunchy Cucumber Carrot Cheese Pitas

  1. Preheat oven to 250 degrees Celcius (480 degrees Fahrenheit).
  2. Prepare the veggies.
  3. Spread the cheese spread evenly over the two pita halves.
  4. Arrange the sliced cucumbers evenly over the pitas, overlapping if necessary.
  5. Season generously with pepper, and salt.
  6. Sprinkle the grated carrots over the cucumber slices.
  7. Season with salt and pepper again, to taste.
  8. Place on a baking wire rack and bake (toast) in preheated oven for 5 minutes, or until the pita edges are lightly browned.
  9. Serve immediately.
