Chicken Stir Fry Recipe
- 3 whole chicken breasts
- 3 tbsp. veg. oil
- 3 tbsp. lite soy sauce
- 1 clove garlic
- 1/2 c. sliced fresh mushrooms
- 1/2 c. summer squash if available
- 1 green pepper
- 1 med. onion, cut in chunks
- 1/3 c. sugar
- 2 tbsp. flour
- Salt and pepper to taste
- 1/2 c. water
- Put oil, chicken breast (cut in bite size chunks) in large cast iron skillet.
- Sear meat at a high temperature.
- Mince garlic and cut up onion and place them in pan next.
- Simmer at medium heat 10 min.
- Next put soy sauce and remaining vegetables in; simmer 10 min.
- Next put sugar and 1/4 c. water.
- Take mix off heat for 2 min.
- Add in flour and 1/4 c. water mix.
- Place on heat for additional 5 min.
- Salt and pepper to taste; add in more soy sauce to taste.
- Serve over rice.
- Serves 6.
