Very Simple Mapo Tofu
- 2 blocks Tofu
- 50 grams Minced pork
- 1 cm piece Ginger
- 1 clove Garlic
- 1/2 The white part of a Japanese leek
- 1 add (to taste) Dried red chili flakes
- 3 tbsp Soy sauce
- 1 tsp Miso
- 1 tsp Sugar
- 50 ml Water
- 1 Katakuriko
- Preparation: 1) Chop the ginger, garlic and white part of the leek finely.
- 2) Slice the tofu into bite-sized portions.
- 3) Mix together the soy sauce, miso and sugar.
- Heat vegetable oil in a frying pan.
- Fry the prepared ginger, garlic, leek and chili flakes.
- When they start to release their aroma, add the minced pork.
- Break up the minced pork and fry until crumbly.
- When the pork turns golden, add the mixed seasonings and let the pork absorb the flavors.
- Stir in the tofu and add water.
- Bring it to the boil and add the katakuriko to thicken.
- At the end, sprinkle on a little sesame oil to enhance the flavor of the dish.
