Very Simple Mapo Tofu

  1. Preparation: 1) Chop the ginger, garlic and white part of the leek finely.
  2. 2) Slice the tofu into bite-sized portions.
  3. 3) Mix together the soy sauce, miso and sugar.
  4. Heat vegetable oil in a frying pan.
  5. Fry the prepared ginger, garlic, leek and chili flakes.
  6. When they start to release their aroma, add the minced pork.
  7. Break up the minced pork and fry until crumbly.
  8. When the pork turns golden, add the mixed seasonings and let the pork absorb the flavors.
  9. Stir in the tofu and add water.
  10. Bring it to the boil and add the katakuriko to thicken.
  11. At the end, sprinkle on a little sesame oil to enhance the flavor of the dish.
