Cheesy Mini Corn Dog Muffins

  1. Heat oven to 400F.
  2. Spray 24 mini muffin pan cups with no-stick cooking spray; set aside.
  3. Prepare corn muffin mix as directed on package.
  4. Stir in hot dog pieces.
  5. Spoon 1 heaping tablespoon mixture into each prepared mini muffin pan cup.
  6. Bake 8-12 minutes or until golden brown.
  7. Remove from oven; place 1 quarter cheese on top of each muffin.
  8. Return muffins to oven; bake 30-60 seconds or until cheese is melted.
  9. Cool 5 minutes in pans; remove from pans.
  10. Serve warm.
