Vegetarian Herb Medley

  1. Preheat oven to 325* F (165* C) Veggies should be bite-sized- no big chunks!
  2. Heat olive oil in a large pan over medium heat.
  3. Add squash, zucchini, bell pepper, onion, and garlic.
  4. Saute until the veggies are soft.
  5. Add tomatoes with juice.
  6. Season with basil, oregano, and salt and pepper to taste.
  7. Transfer mixture to a glass baking dish and bake for 20 minutes.
  8. Sprinkle with parmesan cheese and bake for another 10 minutes.
