Impossible Cheesecake

  1. Heat oven to 350F.
  2. Grease 9-inch pie plate.
  3. Place all ingredients except topping in blender container.
  4. Blend on high speed, stopping blender occasionally to stir, until smooth (about 3 minutes).
  5. Or beat in large bowl on high speed of electric mixer, scraping bowl constantly, for 2 minutes.
  6. Pour into plate.
  7. Bake just until puffed and center dry, about 30 minutes (do not overbake).
  8. Spread cheesecake topping carefully over top.
  9. Cool.
  10. Refrigerate until chilled, at least 3 hours.
  11. Serve with sweetened fresh fruit.
