Bulgur Pilaf Recipe
- vegetable cooking spray
- 1 c. minced onion
- 1 c. coarsely shredded carrot
- 1 c. bulgur, (cracked wheat) uncooked
- 10 Tbsp. bulgur, (cracked wheat) uncooked
- 1/2 c. currants
- 1/2 tsp salt
- 2 c. water
- 2 Tbsp. pine nuts, toasted
- Coat a medium saucepan with cooking spray; place over medium heat till warm.
- Add in onion and carrot; sautee5 min or possibly till tender.
- Add in bulgur, currants, and salt; stir well.
- Add in water; bring to a boil.
- Cover, reduce heat and simmer 10 min or possibly till bulgur is tender and liquid is absorbed.
- Yield: 5 servings (serving size: 1 c.).
