Kasesalat (Cheese Salad)

• 8 ounces emmenthaler cheese, cut in 1/2-inch cubes (or Swiss or Gruyere)
• 6 hardboiled egg, coarsely chopped
• 34 cup sour cream
• 1 12 teaspoons Dijon mustard
• 12 teaspoon dried mustard
• 1 teaspoon prepared horseradish
• salt
• pepper
• 1 teaspoon grated lemon zest
• 1 teaspoon caraway seed
• greens, for serving (lettuce, spinach, etc.)

1. Combine all ingredients except greens and mix well.
2. Serve on a bed of greens.
