The Modern Grilled Cheese
- 4 slices Sourdough Or Country White Bread
- 3 Tablespoons Unsalted Butter
- 2 Tablespoons Fig Jam, Available At Trader Joes, Whole Foods, And Other Specialty Stores
- 4 ounces, weight Cambozola Cheese (Camembert Or Brie Will Work As Well)
- 6 slices Prosciutto
- Generously spread softened butter on one side of two slices of bread an arrange the bread butter sides up, on a work surface.
- Spread one tablespoon of fig jam on the other two slices of bread.
- Add two ounces of cheese on top of the jam and arrange three slices of prosciutto on top of the cheese.
- Place the buttered slices of bread on top of each sandwich, butter sides up.
- Heat a heavy griddle or skillet over medium-high heat.
- Melt 1 tablespoon of butter in the pan.
- Place the sandwich in the pan and press down with a spatula.
- Cover the pan and cook for about 2 to 3 minutes.
- Turn over the sandwiches and cook the second side until golden brown and cheese has melted.
- To serve, slice sandwiches in half on the diagonal, and serve warm with a bowl of creamy tomato soup.
