Silken Tofu and Carrot with Soy-Ginger Sauce

  1. In a small bowl stir together soy sauce, vinegar, gingerroot, and sugar until sugar is dissolved.
  2. Peel and finely grate carrot.
  3. Carefully drain and halve tofu.
  4. Put tofu on 2 plates and spoon sauce over it.
  5. Top tofu with carrot and scallion.
