Shrimp and Grits

  1. For grits: In a medium saucepan, put 4 cups of milk to boil.
  2. (While waiting for milk to boil, begin sauce).
  3. When milk boils, add grits.
  4. Stir and reduce heat to low and cover.
  5. After 10 minutes stir in cheese, seasoning and pepper.
  6. Stir frequently and keep warm.
  7. If grits get too thick add more milk.
  8. For Sauce:.In a food processor, finely chop onion, garlic and bell pepper.
  9. Melt butter and add onion mixture and sausage.
  10. Cook until sausage is done.
  11. Add shrimp, cook until shrimp are pink, about 3 minutes.
  12. Remove shrimp.
  13. (Doesnt have to be exact, may get some sausage too) Just dont leave shrimp to overcook!
  14. Add milk, water, tomato paste, pepper, Cajun spices, and bullion.
  15. Bring to a boil and make sure bullion is dissolved.
  16. Stir in sherry and, parsley, Parmesan cheese.
  17. Sprinkle in flour while whisking sauce until a thickened.
  18. ( Not too thick though, the grits will absorb some).
  19. Add shrimp back in and stir until shrimp are warm.
  20. Spoon sauce over grits and sprinkle with extra cheese.
