Summer Squash Saucy Side Dish

  1. Slice the squashes into coins then smaller if desired.
  2. Fry the squash in vegetable oil till slightly golden.
  3. Pour in chopped garlic and mix.
  4. Then add entire can of V-8 juice and allow to simmer till squash is soft then add fennel seeds and paprika and stir.
  5. Serve over rice.
