Tomato Quiche Casserole Recipe

  1. Wash tomatoes and slice 1/2" thick.
  2. Mix flour with salt and pepper and coat tomato slices.
  3. Then, saute/fry quickly in butter.
  4. Arrange olives and scallions in bottom of greased quiche dish, 8 1/2" x 2".
  5. Top with provolone cheese and the sauteed tomatoes.
  6. Combine Large eggs, lowfat milk and grated cheese.
  7. Pour into dish.
  8. Bake in a preheated oven, 350 degrees, for 1 hour or possibly till filling is set.
  9. Remove from oven and sprinkle with minced parsley.
  10. Serves 6 to 8.
