Lace Cookies

  1. Heat oven to 350 degrees.
  2. Mix all ingredients in a bowl until well combined.
  3. Line baking sheets with parchment paper or no-stick aluminum foil.
  4. Drop batter 3/4-tsp.
  5. at a time on baking sheet, leaving plenty of space between each.
  6. Cookies will spread to 4 or 5 inches in diameter when baked.
  7. Bake 10 to 12 minutes, until thin and golden.
  8. Check early to make sure they don't overbrown.
  9. Line a wire rack with wax paper.
  10. Carefully remove cookies from baking sheet.
  11. They will be sticky, and a thin, metal spatula works best.
  12. Gently transfer to wax paper on wire rack and let cool.
